More mooncakes

Oreo Mocha Snow Skin Mooncake

Recipe for Oreo Mocha Snow Skin Mooncake
Ingredients
(A)  120 g water
       60 g Icing Sugar
       50 g Fresh Cream
       30 g Shortening
       1 tsp Instant Nescafe

(B) 100 g Cooked Glutinous Rice Flour (it's called Koe Fun)
      2.5 ml Coffee Emulco 

Filling 
(C) 120 gm Lotus Paste (buy ready made ones)
      4 pcs Oreo Cookies (remove the cream in the middle and mashed into powder)
      20 g Cooking Chocolate (melted)

(D) 350 g Lotus Paste

METHOD
1. Mix (A) together and then mix (B) together. Put both (A) and (B) into mixing bowl, process till even and divide into 5 equal portions. Let it rest for 30 minutes.
2. Double boil cooking chocolate till it melts, mix in the mashed cookies and lotus paste. Divide into 5 equal portions.
3. Divide lotus paste from (D) into 5 equal portions - 70 g per portion. Use the lotus paste (D) to wrap (C). Set aside.
4. Divide pastry from (1) into 5 portions and roll it individually into flat sheets. You can spread some of the cooked glutinous rice flour to make it less sticky.  Wrap in the filling, seal the edges with your fingers and press it into your chosen mould. Knock it out and keep in the refrigerator to store. Best eaten after 6 hours or so. If it is kept in the fridge for days it will harden and the skin will crack.

Simple and easy car sandwich.


This was super easy to make, just use any hotdog bread or oval shape bread roll to make the car body. I made baked beans with chopped sausages and fill them inside the bread as well as using it as a side dish. The kids had fun making them too and ate everything (almost). You can use any ingredient or dish that you can think of. Use your imagination, the sky is the limit.

In the kitchen with Kitty, Mickey and Pooh

Made some cute creations with the new batch of multipurpose cutters that has just arrived at the store. Need to admit that there are still room for improvements but decided to post it for all to see.

Pooh Mango Pudding


I vowed to create something every week and for last weekend, despite the hectic schedule, took a fast track and made some Pooh Mango Pudding using ready made pudding powder.

Big Pooh, Small Pooh, all the same as long as it tastes good in the mouth and pleasing to the eyes.

Valentine Special

Hello Kitty, Winnie the Pooh and Mickey Mouse Chocolates

Could not believe that it's so easy to create such beautiful and yummylicious chocolates. Just in time for valentine's day. What better way to say I LOVE YOU that something made by yourself and not available anywhere else. Priceless!

Not only does it please the eye, it's also easy to make. It took me about 30 minutes from preparing to eating it. All you need is some cooking chocolate, mould and a freezer.

You will need to melt the cooking chocolate (make sure you do not buy the non-sweet time as it would be very bitter otherwise.) Melt the chocolate using the double boiled method as direct heat will burn the chocolate.

Once the chocolate is melted, spoon it into the moulds and let it cooled down before putting it into the freezer. You can eat it after 10 mintes - Simple, Easy and Cost Effective.

Had a fantastic time last weekend making a light fruit cake, some gingerbread cookies and milk pudding. The fruit cake is almost finish and will need to make it again tomorrow in time for Christmas Eve party.

1 Pooh 2 Style

I could not resist going into the kitchen and create something for the family to enjoy despite the tight schedule that I had last week. First I made a butter cake using my No-Fuss Sponge Cake recipe and then I made Agar-Agar both using the same mould - Winnie the Pooh Silicon Mould (Big) and both came out extremely beautiful not to mention delicious too. Here is the proof:



I also made Agar Agar (using ready made mix) using the smaller 4 in 1 silicon moulds - Hello Kitty, Mickey Mouse and Winnie the Pooh. These silicon mould are suitable to be used in the oven as well as in the fridge. Just to show how versatile they are.

Boiled Egg Mould

When I first used the Mickey Boiled Egg Mould I thought that it looked wonderful and decided to try out the other 3 moulds as well - Hello Kitty, My Melody and Winnie the Pooh. I am attaching pictures so that you can see how kawaii they look. All these has kept me very busy over the weekend but I had lots of fun making them. The whole family can join in too as the cutters are not sharp and safe to be used by children. Till next time.




MICKEY SUNNY SIDE UP



Apart from the Pooh Sandwich I also used the Mickey Mouse Mould and Stencil Set to cook sunny side up to accompany the sandwich.


Heat up the frying pan and put the mould down. Pour some oil into the centre of the mould.






Break the egg slowly into the mould.







Cook over small fire gently and if there are any spill outs, use a knife to cut it away.






There you go, a mickey shape sunny side up. This set was for my daughter so I used the Hello Kitty Multipurpose Mould and Cutter to cut out bread, ham and cheese for her as finger food.





If you like your eggs to be well done, you can also remove the mould and flip the egg over so that both sides can be cooked.

Breakfast with Pooh

I hope that all of you had a wonderful rest over the long weekend. I was very busy as I was parctically in the kitchen the whole time the past 2 days. First I made a Pooh (main act) breakfast for the family with Mickey and Hello Kitty as supporting acts. Then I made Butter Shortcakes and also Boiled Eggs. I am sharing all these with you and I hope that you will enjoy them. I certainly did.

POOH BREAKFAST




I made yummylicious Pooh Sandwich with Chicken Ham and Cheese using the Winnie the Pooh Mould for the family. Its quite easy and simple and the pictures below should be helpful as they say a picture speaks a thousand words.

I used Gardenia bread as it is square and the mould fits in nicely. Just press the mould onto the bread to cut the shape out and then press the stamper so that the face outline could be cut out. I made a plain one using just the mould as the base of the sandwich and then another one with the face details as the top of the sandwich. Using the same cutter, I cut out the Chicken Ham and Cheese so that it fits nicely within the sandwich. Last but not least I put it into the oven to toast. I also use the Hello Kitty Multipurpose Mould and Cutter to cut the bread and toast it together so that it can be used as croutons or snacks. (My daughter loved it.)


Idea: You can also spread some garlic butter over the bread before toasting it to make Garlic Bread.
