Ingredients:<br />
1. 85ml butter, softened<br />
2. 75g caster sugar<br />
3. 1 egg<br />
4. 1 tablespoon (15ml) cocoa powder, sifted<br />
5. 115g self raising flour, sifted<br />
6. 85ml milk<br />
7. 1/2 teaspoon (2.5ml) vanilla extract<br />
<br />
Method:<br />
1. Preheat oven to 160 C. Line/Grease a cupcake pan. In a medium size bowl, use an electric mixer on high speed to cream the butter and the sugar until light and fluffy. Add the egg and mix well.<br />
2. Add the cocoa powder, flour, milk and vanilla and beat with an electric mixer on medium speed until well combined.<br />
3. Divide the mixture evenly between the cupcake moulds. Bake for 10 - 15 minutes until well risen and firm to the touch. Flatten the dough into rounds and place onto baking tray and use a fork to prick holes. Mid-Autumn Festival is just around the corner and all restaurants and bakeries are all starting to sell Mooncakes already. Decided to make my own Mooncake this year (will still buy as some are just too delicious to ignore). Started with Mooncake Biscuits, least ingredient, easiest to make. Since it turned out yummy I will proceed to the next level. Lotus Paste Mooncake, Snow Skin Mooncake (my favourite) and Jelly Mooncake HERE I COME!<br />

</div>Ingredients:<br />
1. 200g Golden Syrup (you can actually make this yourself but I went the easy way and bought ready made golden syrup from Bake with Yen).<br />
2. 1/4 tsp of bicarbonate of soda (sifted)<br />
3. 3/4 tbsp alkaline water<br />
4. 50g corn oil<br />

Combine all the ingredients in a basin (big mixing bowl). Mix with a wooden spoon and allow to rest for 4 - 5 hours.<br />
<br />
Ingredients: 300g plain flour (sifted) and thick soya sauce for colouring only.<br />
<br />
Add thick soya sauce and stir well. Fold in sifted flour gradually and mix evenly to form a smooth, soft dough. DO NOT KNEAD. Let dough rest for 6 - 7 hours.<br />

Preheat oven to 180C.<br />
Divide dough into small portions. Dust with a little flour and press into desire mould. (I used my silicon moulds, will try to use Cookie Cutters next time as I think they may be better). Knock out on a greased baking tray or lined with baking parchment. Bake in pre-heated oven at 180C for 8 minutes.<br />
<br />
Remove tray from the oven and leave for 1 - 2 minutes. Brush biscuits with egg glaze and bake again for 6 -7 minutes or until golden.<br />

Wanted to do something fast and easy and also YUMMY!. Although this is a donut maker, I would say that it's a healthy donut maker as it's not deep-fried in oil like the traditional ones. This is cooked in the mircowave. Put in the flower shaped strainer and then close it with the Hello Kitty head cap. Make sure you close it tight so that there is no spillage.</div><div class="separator" style="clear: both; text-align: left;">3. Shake it for about 2 minutes until everything is mixed well. I would suggest that you shift the pancake premix first so that it is easier to mix while in the cup otherwise lumps may form.</div><div class="separator" style="clear: both; text-align: left;">4. Remove the cap and the strainer and replace with the spout.</div><div class="separator" style="clear: both; text-align: left;">5. Grease the 4 moulds with some vegetable oil. Therefore took some initiative and got some of it translated and work blindly on the rest.</div><div class="separator" style="clear: both; text-align: left;"><br />
</div><div class="separator" style="clear: both; text-align: left;">Instead of making waffle batter from scratch I bought a packet of Betty Crocker Pancake mix and all I needed to do was add water and oil. It was a small packet (about 190grms) and made 5 Hello Kitty waffles.</div><div class="separator" style="clear: both; text-align: left;"><br />
</div><div class="separator" style="clear: both; text-align: left;">First you need to preheat the waffle iron by putting it on the stove, best to heat both sides for about 1 - 2 minutes each side. When it is warmed enough, open the iron and scoop the batter into the iron and close gently. Make sure that there are sufficient batter, too little and the shape will not form, too little and it will overflowed. I cooked about 1 - 2 minutes each side before opening to check whether it has browned nicely. </div><div class="separator" style="clear: both; text-align: left;"><br />
</div><div class="separator" style="clear: both; text-align: left;">There is no need to grease the iron as the iron is made of good quality non-stick material. You will need to however make sure that the batter is cooked before opening the iron to peep as it will break if it is not cooked yet. Do not despair if it does not come out nice as (one side burned etc) as practice makes it perfect. I made 5 waffles and only 3 were good enough to be photographed. You be the judge. (Springform tins are not suitable). </div><div class="separator" style="clear: both; text-align: left;">Bain-Marie = when you preheat the oven, put a second shelf under the first. Place a shallow heatproof dish on this shelf and just before putting the cake into the oven, fill the dish with hot water.</div><div class="separator" style="clear: both; text-align: left;"><br />
</div><div class="separator" style="clear: both; text-align: left;">This recipe is easy to make, no special or difficult to find ingredients required and takes about 15 mins to prepare.</div><div class="separator" style="clear: both; text-align: left;"><br />
</div><div class="separator" style="clear: both; text-align: left;">1. Break the eggs into a bowl and set aside.</div><div class="separator" style="clear: both; text-align: left;">2. Put the sugar and water in a saucepan over a medium heat and whisk to dissolve the sugar.</div><div class="separator" style="clear: both; text-align: left;">3. When the sugar has dissolved, bring to the boil and then remove immediately from the heat.</div><div class="separator" style="clear: both; text-align: left;">4. Add the chocolate in pieces and mix until it has melted.</div><div class="separator" style="clear: both; text-align: left;">5. Next add the butter, in cubes and mix until it is fully incorporated.</div><div class="separator" style="clear: both; text-align: left;">6. After 5 minutes, add the beaten eggs and mix lightly.</div><div class="separator" style="clear: both; text-align: left;">7. Sprinkle the sifted flour over the chocolate mixture and incorporate it with the whisk.</div><div class="separator" style="clear: both; text-align: left;">8. Pour the mixture (not scoop as you do not want air bubbles / pockets to form) into the prepared mould and transfer to the oven. Bake the cake for 30 minutes or until the centre no longer wobbles.</div><div class="separator" style="clear: both; text-align: left;">9. Remove the cake and allow to cool on a wire rack for 5 minutes before turning onto a plate. When the cake is completely cold, wrap in cling film and put it into the fridge until it is ready to be served.</div><div class="separator" style="clear: both; text-align: left;">10. You can decorate the cake with cocoa powder or icing sugar just before serving.</div><div class="separator" style="clear: both; text-align: left;"><br />

</div>Preheat oven to 220C. Grease a long loaf tin or any mould of your choice.<br />
1. Melt the butter in a small saucepan, remove immediately from the heat.<br />
2. Put the polenta, flour, baking powder, bicarbonate, sugar and salt in a large bowl.<br />
3. Mix all the dry ingredients together and make a well in the centre.<br />
4. Break the eggs into the well and mix in gently using a wooden spoon.<br />
5. Add the milk and buttermilk. Mix well until the dry ingredients are fully incorporated.<br />
6. Pour in the melted butter and mix again until everything is evenly blended.<br />
7. Pour the mixture into the tin. Transfer to the oven and bake for 30 minutes.<br />
8. When the top is golden brown, remove the cake from the oven and turn out onto a wire rack to cool for 5 - 10 minutes.<br />
9. Best eat warm with a dollop of butter. Can also be eat as an accompaniment to savoury dishes (soup or vegetable dishes).<br />

</div><div class="separator" style="clear: both; text-align: left;">Preheat oven to 170C. Grease the moulds. I used various sizes of the Mickey Mouse Silicon Mould (small, medium and large) as well as Hello Kitty and Winnie the Pooh Silicon Mould (medium).</div><div class="separator" style="clear: both; text-align: left;"><br />
</div><div class="separator" style="clear: both; text-align: left;">1. Cream the butter in a mixer on medium speed until butter becomes pale and light.</div><div class="separator" style="clear: both; text-align: left;">2. Set aside 1 tablespoon (about 15ml) of sugar and add the rest of the sugar into the creamed butter mixture. Continue to cream for another 2 minutes or so.</div><div class="separator" style="clear: both; text-align: left;">3. With the mixer still on medium speed, add the separated egg yolks, 2 at a time and waiting about 20 seconds between each addition.</div><div class="separator" style="clear: both; text-align: left;">4. Add the milk and vanilla essence and mix well. (Mix using a spatula and not the mixer)</div><div class="separator" style="clear: both; text-align: left;">5. Fold in the sifted floor. Add in batches as it will be difficult to fold if you put all the floor in at one go.</div><div class="separator" style="clear: both; text-align: left;">6. In a separate bowl, whisk the egg whites until slightly frothy. Add the lemon juice and slowly drizzle in the sugar that was put aside earlier. Whisk until mixture forms soft peaks. (You can test with your finger).</div><div class="separator" style="clear: both; text-align: left;">7. Using a spatula, gently fold the egg whites into the batter. Pour the batter into the greased moulds and smooth the top with a spatula.</div><div class="separator" style="clear: both; text-align: left;">8. Bake in the preheated oven until golden brown and the top of the cake splits slightly. A cake skewer stuck into the cake should come out clean.</div><div class="separator" style="clear: both; text-align: left;">9. The ingridients will make a big cake but I did not halved it as I am not sure whether the outcome would be the same. Use a big mixer bowl as the ingridients will keep increasing and you will not have extra space for mixing manually.</div><div class="separator" style="clear: both; text-align: left;">d. Preheat the oven to 150C. Put a shelf in the centre with a second just below and place a shallow dish or deep plate on this lower shelf.<br />
<br />
1. Whiz the biscuits for 30 - 60 seconds in a food processor. You can also use your hand to crumb the biscuits.<br />
2. Melt the butter (for the base) in a small saucepan and remove from the heat.<br />
3. Mix the sugar with the biscuits crumbs in a bowl.<br />
4. Pour the melted butter on top and mix together with a fork.<br />
5. Spread this mixture in the base of a 20cm springform cake tin.<br />
6. Firm the crumbs the refrigerate the tin for 10 minutes.<br />
7. Put the cream cheese with the sugar in the bowl of a food processor. Mix for 1 minute until the mixture is softened.<br />
8. Add the mascarpone and mix again for 20 seconds. Remove the lid and scrape down the sides with a flexible spatula.<br />
9. Add the eggs one at a time, mixing well before adding the next. Scrape down the sides again then add the vanilla extract and mix briefly.<br />
10. Remove the tin from the fridge and pour the cream mixture over the biscuit base.<br />
11. Fill the shallow dish or bowl on the lower oven shelf with very hot water. Transfer the cheesecake to the upper shelf of the oven. Bake for 1 hour 15 minutes or until the middle of the cheesecake is no longer runny.<br />

Remove the cheesecake from the oven and allow to cool on a wire rack. Once cool, cover with cling film and allow to set in the fridge for at least 3 hours before serving. It will reach its ideal consistency after 12 hours.<br />
